I got my HDD on there, created a file, its on the network i think and i added plex, the plugins, and now I am lost. I have no idea what to do next and i cant seem to add a network drive. I would like some tips with different os since we have Windows, Android, MacOS, Linux, and ios. I am obviously new to the whole NAS, RAID storage, and plex. I had a Pi, some HDDs and decided to try something. We lost some HDDs when our PC went down some time ago. Hope a NAS Pi setup would be more stable. Also plex is interesting. Need help moving forward.

As I read here in several threads there should be better ARM-based devices for OMV, than RPi´s.

Plex on an RPi isn't a very good idea. Neither is a NAS on an RPi for that matter. Keep in mind that this is going to be slow and painful.
You seem to have set up OMV. Now you need to create your users and shared folders. Then you assign permissions to those users for each folder (using the Permissions button, avoid the ACL settings).
For sharing folders on a wide variety of platforms, the best is to use the SMB/Samba/CIFS protocol, so use that tab to share your folders over the network.
After that, mounting a shared folder on each device is going to depend on the OS, but it's usually pretty straightforward.

Why would a toy be more stable than a PC? Especially since you chose the worst toy possible.But more importantly what you need is data protection and not 'stability'. So be prepared that you will loose data again if you're not willing to investigate some time in implementing backup.

Guess my Pi endeavor is sort of doomed. Was fun to try, as i had everything just laying around on hand. Was an interesting experience for sure. BTW i didn't know there where so many nice Pi clones/replacements out there. a good and cheap board is the pine rock64 - based on the same or similar CPU/arch that you mentioned above.
I recently bought a rock64. It's running OMV 3 (armhf) with plex and transmission as docker containers. Works really well as a low cost NAS/Plex server.
I would agree with posters above that RPi is not great for NAS/Plex but it is fine for testing and getting better with using OMV while you wait for a decent board! I have created a RPi Plex/NAS setup and it worked fine.
One lesson I have learnt about these boards is that the developer and community support is the most important consideration. The rock64 was recommended and it is good but there are other options.
