Maybe a dumb question. I am new to this so please be kind. I installed the sftp plugin so I could access the OMV system files from WinSCP.
However, I can only enable shares on the data drive for sftp. Is that all that is possible? I already have Samba access to that drive from Windows so sftp does nothing for me here. I want to be able to look at the files on the OS drive.

You don't need the sftp plugin to access your OMV system via sftp. The sftp is meant to sandbox users to individual shares. If you don't need that, just connect sftp to the standard ssh port on your system.
As for changing the port, I never change the port on the OMV system itself. If you want to connect from the internet and use a non-standard port (good idea), then have the port forwarding on your router listen on a different port (12321 or whatever) and forward to 22. Then you don't have to use a non-standard port when connecting to the system inside your network.
