Yes, remove the RAID and wipe each of the drives. After that you can create a new RAID or create filesystems on the separate drives.

You can do it from the GUI of OMV, except if you have to use wipefs, which has to be executed from the CLI (terminal/console).

I assume you have access to the OMV GUI.
Create a user (or use one that is already created) and put it in the sudo and ssh groups.
Log in to the CLI with that user and type sudo passwd root
Enter the new password. It will ask you twice.
That is your new root password.
