Your persistance motivated me to rip the band aid off and upgrade to OMV6. I didn't have time to plan my backup so i just crossed my fingers, prayed to "server gods" and ran the upgrade command.
As of now, none of my settings seems to have changes so that's a good news. I'm also loving the dashboard which also displays my containers which is a big plus.
I am however still keen on changing my network settings as mentioned in 1st post and hopefully will make some progress this weekend.

I am glad that you have updated to OMV6 and that the gods of the server have been kind to your action. Regardless you should have a backup of all your data

One solution for that is to create a guest network, most routers allow this. So the IoT devices in the guest network have no access to the server or the "normal" Wi-Fi network. Your network is still secure and there is no point in removing samba or applying firewall measures on your local network.
