Need help setup server (NAS,SeedBox,Plex/Jellyfin)

Hello everyone, I am sorry if this post is maybe not in the correct forum/section.

First of all, I have 0 knowledge in linux/proxmox/openmediavault/docker, but I do have ok knowledge of windows device.

So, I have a desktop (intel i5 8400, 24gb of ram, 512gb ssd and 2x18tb hdd) on which I want to do 3 things :

- NAS (and DAS to my main computer via ethernet cable)

- Torrent download and seeding (and web browser to download)

- Run a media playback service (Plex, Jellyfin, etc)

I want my 2 hdd to be in raid and I wish for my NAS, SeedBox and media player to access the same drives on the computer.

I have heard of people runing OpenMediaVault with docker container and other that run them on 3 separate VM with Proxmox.

Which one of the 2 options would you suggest, or if you have a third one, and could you refer to some guides (or make one) for me to make the server.

I encountered my first problem while installing OMV

Before seing the Configure the Network section

I have the error

[!!] Configure the network

Network autoconfiguration failed

Your network is probably not using the DHCP protocol. Alternatively, the DHCP server may be slow or some network hardware is not working properly.

I added a network card to my pc but never connected it to my internet could this be the cause.

I aborted the installation then restarted the computer.

From there how to I configure the network in the terminal, which command should I type.
