I started out thinking I could just wipe the disk, and then set it up again and mount it with a new File System. However, I am not allowed to do this, nor to unmount it.
I don't actually need to wipe the drive if I can just change the name of the file system. I found the following post by macom, Feb 9th 2019, in:
"If you want to change the file system label the cleanest procedure should be:
1. remove all shares on that file system from the services
2. remove the shares on that file system (only the share, not the content!!!)
3. un-mount the file system
4. change the file system label via CLI
5. mount the file system with the new name
6. create the shared folders
7. add the shared folders to the services
All steps except #4 to be performed in the GUI of OMV. You should really not change config.xml or fstab unless you really know what you are doing."
However, I cannot see how to remove all shares on that file system from the services. Not sure--should I just try to do this in Windows networking? Seems like I am missing where to do this in the GUI. ...I haven't gotten to using CLI yet, and don't know if I will run into trouble with that, but I need to get through steps 1, 2 & 3 first. I think I should be able to figure it out.
For example, I checked under Access Rights Management/Shared Folders, "delete" is greyed out on the folder I want to delete. Where else is this referenced that I would be able to delete?

BTW, when I tried to Wipe the disk, I got the following error messages:
